  • 6 medium fresh peaches, sliced (about 3 pounds)
  • 1 cup granulated sugar (200 g)
  • 1 cup all-purpose flour (125 g)
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk (240 ml), whole or 2%
  • ½ cup unsalted butter (115 g), melted
  • ¼ cup granulated sugar (50 g) for cinnamon sugar topping
  • 1 tablespoon ground cinnamon for topping
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and slice about 6 medium peaches into ½ inch thick wedges. Toss the sliced peaches in a mixing bowl with 1 cup sugar, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract if using. Let sit for 10 minutes to macerate.
  3. In a large bowl, whisk together 1 cup flour, 1 ½ teaspoons baking powder, and ¼ teaspoon salt. Add 1 cup milk and ½ cup melted unsalted butter. Stir just until combined; batter will be slightly lumpy.
  4. Pour the batter into a greased 9×9-inch (23×23 cm) baking dish.
  5. Spoon the peach mixture evenly over the batter, spreading gently so peaches are submerged but batter peeks through.
  6. Mix ¼ cup sugar with 1 tablespoon cinnamon in a small bowl. Sprinkle evenly over the top of the peaches and batter.
  7. Bake for 40 to 45 minutes until topping is golden brown and peaches are bubbling. Tent with foil if topping browns too fast during last 10 minutes.
  8. Let the cobbler rest for about 10 minutes before serving to thicken the juices.

Do not overmix the batter to keep the topping tender. Use ripe but firm peaches to avoid watery filling. Tent with foil if topping browns too quickly.
