This easy one-bowl pumpkin dump cake is a ridiculously simple fall dessert made with pantry staples. No mixer needed—just stir the pumpkin filling, dump the cake mix on top, and bake for a buttery, spiced treat that tastes like autumn.

  • 1 can (12 oz) evaporated milk
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 box (15.25 oz) yellow cake mix
  • 3/4 cup unsalted butter, melted
  • 1/2 cup chopped pecans or walnuts (optional)
  • Caramel sauce or whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, granulated sugar, vanilla extract, pumpkin pie spice, cinnamon, and salt. Whisk until smooth and well combined.
  3. Pour the pumpkin filling into the prepared dish and spread into an even layer.
  4. Sprinkle the dry cake mix evenly over the pumpkin layer. Do not stir.
  5. Drizzle the melted butter evenly over the cake mix. If using nuts, sprinkle them on top.
  6. Bake for 45-50 minutes, until the top is golden brown and the edges are bubbly. The center should still have a slight jiggle.
  7. Cool for at least 15-20 minutes before serving. Serve warm or at room temperature, optionally with whipped cream or caramel sauce.

Notes

Don’t overbake—center should have a slight wobble. Let rest 15-20 minutes before cutting to allow filling to set. For best results, use room temperature eggs and evenly drizzle melted butter over the cake mix.
