Easy Oktoberfest Bratwurst and Sauerkraut Skillet

A quick and easy one-skillet meal featuring browned bratwurst, tangy sauerkraut, sweet apples, and caramelized onions. Perfect for Oktoberfest or any cozy weeknight dinner.

  • 4 fresh bratwurst links (about 1 pound)
  • 1 (14-ounce) can or jar sauerkraut, drained but not rinsed
  • 1 medium yellow onion, thinly sliced
  • 1 medium apple (Granny Smith or Honeycrisp), peeled and grated
  • 2 tablespoons unsalted butter (or olive oil for dairy-free)
  • 1/2 cup low-sodium chicken broth (or lager/pilsner beer)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon caraway seeds (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Brown the brats: Heat 1 tablespoon of the butter (or oil) in a large skillet over medium-high heat. Add the bratwurst links and cook for 2-3 minutes per side until nicely browned all over. Transfer to a cutting board and let rest for 1 minute.
  2. Slice the brats: Slice the browned brats into 1/2-inch thick rounds (on a slight diagonal if desired).
  3. Cook the onions: Reduce heat to medium. Add the remaining 1 tablespoon of butter to the skillet. Add the sliced onion and cook, stirring occasionally, for 3-4 minutes until softened and golden at the edges.
  4. Add the apple and caraway: Stir in the grated apple and caraway seeds (if using). Cook for 1-2 minutes, stirring constantly.
  5. Add the sauerkraut and broth: Add the drained sauerkraut to the skillet. Stir in the chicken broth (or beer) and Dijon mustard. Bring to a simmer and cook for 3-4 minutes, stirring occasionally.
  6. Return the brats: Nestle the sliced bratwurst back into the sauerkraut mixture. Simmer for 3-5 minutes until heated through. Season with salt and pepper to taste.
  7. Garnish and serve: Remove from heat. Sprinkle with fresh parsley. Serve hot.

Notes

For best flavor, brown the brats whole first before slicing. Do not rinse the sauerkraut to retain its tangy flavor. Grating the apple allows it to melt into the sauerkraut. The recipe can be made a day ahead for even better flavor.
