Ingredients

Scale
  • 1 box chocolate cake mix (e.g., Duncan Hines or Betty Crocker)
  • 1/2 cup cream cheese frosting (store-bought, e.g., Pillsbury)
  • 1/4 cup unsweetened cocoa powder (optional, for deeper chocolate flavor)
  • 12 ounces orange candy melts (e.g., Wilton)
  • 1 tablespoon coconut oil or shortening
  • Candy corn (about 30 pieces per turkey)
  • Mini chocolate chips (for eyes)
  • Orange candy melts or orange M&Ms (for beak)
  • Pretzel sticks (broken in half, for legs)
  • Red candy melts or red frosting (for wattle)
  • Lollipop sticks (optional)

Instructions

  1. In a large mixing bowl, crumble the entire box of chocolate cake mix. Add 1/2 cup cream cheese frosting and 1/4 cup cocoa powder (if using). Mix with your hands or a sturdy spatula until the mixture comes together like a soft dough. It should hold its shape when pressed. If too dry, add a tablespoon of frosting at a time; if too sticky, add a tablespoon of cocoa powder.
  2. Scoop out about 1.5 tablespoons of the mixture and roll into a ball. Shape the ball slightly into an oval, then pinch one end to create a slight point for the head. Place each shaped piece on a parchment-lined baking sheet. You should get about 12-15 turkeys.
  3. Chill the baking sheet in the fridge for at least 30 minutes (or freeze for 15 minutes if in a hurry) until firm.
  4. Place the orange candy melts in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until completely smooth. Add 1 tablespoon of coconut oil or shortening and stir until glossy.
  5. If using lollipop sticks, insert one into each chilled cake pop. Dip the cake pop into the melted coating, covering it completely. Gently tap off excess coating by rotating the stick. Place the coated pop back on the parchment-lined sheet. If not using sticks, use a fork to dip and drain excess.
  6. While the coating is still wet, press candy corn pieces into the back of the turkey body in a fan pattern (5-7 pieces per turkey). Work quickly as the coating sets fast.
  7. Use a toothpick to dab a tiny bit of melted coating onto the head area. Press an orange candy melt or M&M for the beak. Add two mini chocolate chips for the eyes.
  8. Melt a small amount of red candy melts (or use red frosting). Using a toothpick or small piping bag, draw a tiny red wattle under the beak. Break a pretzel stick in half and press two pieces into the bottom of the turkey for legs.
  9. Place the decorated turkey cake pops back in the fridge for 15-20 minutes to set the coating completely.

Notes

For best results, chill the shaped pops for at least 45 minutes. If the coating cracks, let the pops sit at room temperature for 5 minutes before dipping. If candy corn slides off, use a little extra melted coating as glue. These cake pops taste even better the next day.
