  • 1 ½ cups (135g) old-fashioned rolled oats
  • ½ cup (125g) natural creamy peanut butter
  • ⅓ cup (113g) honey
  • 2 tablespoons (14g) ground flaxseed (optional)
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ⅓ cup (60g) mini chocolate chips (optional)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Measure out 1 ½ cups (135g) of rolled oats, ½ cup (125g) peanut butter, ⅓ cup (113g) honey, 2 tablespoons (14g) ground flaxseed, 1 teaspoon vanilla extract, ½ teaspoon cinnamon, and optional mini chocolate chips or chia seeds.
  2. In a large mixing bowl, stir together the oats, ground flaxseed, cinnamon, and chia seeds (if using) to evenly distribute dry ingredients.
  3. Pour in the peanut butter, honey, and vanilla extract. Mix with a spatula or wooden spoon until sticky and thick.
  4. Press and fold the mixture until every oat is coated and the ingredients bind into a dough-like consistency. Adjust by adding honey or peanut butter if too dry, or oats if too wet.
  5. Gently fold in mini chocolate chips if using.
  6. Using damp hands, scoop about a tablespoon (15g) of mixture and roll into tight balls. Place on a lined baking sheet. Yield about 18-20 balls.
  7. Refrigerate the tray for at least 30 minutes to firm up the balls.
  8. Transfer the energy balls to an airtight container and store in the refrigerator for up to one week or freeze for longer storage.

Notes

Use room temperature peanut butter for easier mixing. Damp hands help prevent sticking when rolling balls. Adjust sweetness with honey or maple syrup. Chill for at least 30 minutes to help balls hold shape. Store airtight in fridge or freeze for longer storage. For nut-free version, substitute sunflower seed butter. Leaving out chocolate chips makes them less messy for kids.
