These no-bake protein balls combine bittersweet dark chocolate, toasted almonds, and almond butter for a quick, healthy snack that’s chewy, crunchy, and satisfying. Perfect for busy days, post-workout refuels, or anytime you need a nourishing treat.

  • 1/2 cup (130g) almond butter, creamy and unsweetened
  • 1 cup (90g) old-fashioned rolled oats
  • 1/2 cup (60g) protein powder, vanilla or unflavored whey or plant-based
  • 1/4 cup (30g) dark chocolate chips (70% cocoa or higher)
  • 1/2 cup toasted almonds, roughly chopped or slivered
  • 3 tablespoons (45ml) maple syrup
  • 1 teaspoon vanilla extract
  • Coarse sea salt flakes, for sprinkling
  • Optional: 1 tablespoon chia seeds or flaxseeds

Instructions

  1. Toast the almonds: Preheat a skillet over medium heat. Toss in chopped almonds and toast, stirring often, until fragrant and lightly golden (about 5 minutes). Set aside to cool.
  2. Mix dry ingredients: In a mixing bowl, combine rolled oats, protein powder, toasted almonds, and dark chocolate chips. Stir to distribute evenly.
  3. Add wet ingredients: Add almond butter, maple syrup, and vanilla extract to the dry mix. Mix with a spatula or hands until a sticky dough forms. If too dry, add water or almond milk one teaspoon at a time.
  4. Form the balls: Scoop about 1 tablespoon (15g) of dough and roll into balls between palms. Place on a lined baking sheet or plate. Repeat until all dough is used (makes 15-18 balls).
  5. Chill to set: Refrigerate for at least 30 minutes to firm up. Once chilled, sprinkle coarse sea salt flakes on top of each ball.
  6. Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.

Notes

If the dough is too sticky to roll, chill it for 10 minutes first. Press balls firmly to help them hold shape. Toasting almonds is essential for flavor. Use coconut oil on palms to prevent sticking. For smoother texture, pulse oats and almonds in a food processor before mixing. Store in airtight container; freeze for longer storage.
