  • 24–30 candy eyeballs
  • Red gel icing or strawberry syrup
  • Optional: Black gel icing

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract.
  5. Add the dry ingredients in three additions, alternating with the milk. Mix on low speed until just combined.
  6. Add the neon green gel food coloring, starting with ½ teaspoon and adding more until desired color is reached.
  7. Divide the batter evenly among the liners, filling each about ⅔ full. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool in the pan for 5 minutes, then transfer them to a cooling rack to cool completely.
  9. While the cupcakes cool, make the frosting: Beat the softened butter until smooth, then gradually add the powdered sugar. Add the heavy cream, vanilla, and salt, and beat until light and fluffy.
  10. Transfer the frosting to a piping bag or zip-top bag. Pipe a generous swirl of frosting onto each cooled cupcake.
  11. Immediately place a candy eyeball in the center of each frosted cupcake. Use red gel icing or strawberry syrup to draw thin lines radiating outward from the eyeball.
  12. Let the frosting set for about 15 minutes before serving.

Notes

Do not skip the cooling step; warm cupcakes will melt the frosting. Use gel food coloring for vibrant color. For best results, let ingredients come to room temperature before starting.
