  • 1 can (12 oz) evaporated milk
  • 3 large eggs, room temperature
  • 1 cup granulated sugar (or 3/4 cup for less sweetness)
  • 1/2 cup pure maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 box (15.25 oz) yellow cake mix (without pudding)
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons brown sugar (light or dark)
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, granulated sugar, maple syrup, pumpkin pie spice, vanilla extract, and salt. Whisk until smooth and completely combined, about 1-2 minutes.
  3. Pour the pumpkin mixture into the prepared baking dish and spread evenly. Tap the dish gently on the counter to release air bubbles.
  4. In a medium mixing bowl, combine yellow cake mix, chopped pecans, melted butter, brown sugar, and cinnamon. Mix with a fork or your fingers until crumbly and all the cake mix is moistened. The mixture should clump together slightly when squeezed.
  5. Sprinkle the pecan crumble evenly over the pumpkin mixture. Do not stir or press it in.
  6. Bake for 45-55 minutes, until the top is golden brown and the edges are bubbly. A toothpick inserted into the center should come out mostly clean with a few moist crumbs.
  7. Let the cake cool in the dish on a wire rack for at least 20-30 minutes before serving. Serve warm or at room temperature.

Notes

Do not overmix the pumpkin layer. Toast pecans first for deeper flavor. Let cake cool completely before refrigerating to avoid soggy crumble. Use room temperature eggs for best results. Do not press crumble into pumpkin layer.
