Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes, flipping occasionally. Drain on paper towels and reserve bacon fat.
  2. In a bowl, whisk together eggs, milk or cream, salt, and pepper.
  3. Heat skillet over medium-low heat and add butter or 1 tablespoon reserved bacon fat. Pour in egg mixture and gently stir, folding eggs as they set. Cook until softly scrambled but still moist, about 3-4 minutes. Remove from heat.
  4. Lightly toast English muffins until just golden. Cool completely.
  5. Assemble sandwiches by layering scrambled eggs, a slice of cheddar cheese, and two slices of bacon on the bottom half of each muffin. Add spinach or arugula if desired. Top with muffin caps.
  6. Wrap each sandwich tightly in plastic wrap, then place in a freezer bag or airtight container. Label with date and freeze up to 3 months.
