  • 6 large eggs, room temperature
  • 1/2 cup small-curd cottage cheese
  • 8 oz breakfast sausage (ground pork or turkey), browned and crumbled
  • 1 cup finely diced bell peppers (mix of red and green)
  • 1/2 cup diced yellow onion
  • 1 cup shredded cheddar cheese (sharp or mild)
  • 6 flour tortillas, 8-inch size (or gluten-free corn or almond flour tortillas)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon cumin (optional)
  • 2 tablespoons chopped fresh cilantro
  • Hot sauce or salsa (optional, for serving or mixing in)

Instructions

  1. Dice the bell peppers and onions finely.
  2. In a large skillet over medium heat, warm 1 tablespoon of olive oil. Add the sausage and cook, breaking it up with a spatula, until browned and cooked through, about 7-8 minutes. Remove sausage from pan and set aside.
  3. In the same skillet, add the remaining olive oil. Toss in the diced onions and bell peppers, seasoning lightly with salt and pepper. Cook until softened and fragrant, about 4-5 minutes. Remove from heat and combine with cooked sausage in a bowl.
  4. In a mixing bowl, whisk together the eggs, cottage cheese, cumin, salt, and pepper until fully blended.
  5. Pour the egg mixture into the skillet over medium-low heat. Stir gently and continuously, folding the eggs as they start to set, until they reach a soft, creamy consistency—about 5 minutes. Remove from heat.
  6. Add the cooked sausage and veggie mixture back to the skillet with the eggs, mixing gently to combine. Stir in half the shredded cheese and fresh cilantro. Taste and adjust seasoning as needed.
  7. Briefly heat the tortillas in a dry skillet or microwave for 10-15 seconds to make them pliable for wrapping.
  8. Lay each tortilla flat. Spoon an even amount of the filling onto the center, sprinkle with the remaining cheese, and fold in the sides before rolling tightly.
  9. Wrap each burrito in foil or parchment paper.
  10. For immediate enjoyment, toast the burritos in a skillet over medium heat until the tortilla is crispy and golden, about 2 minutes per side.
  11. For later use, place the wrapped burritos in a freezer-safe bag or container and freeze up to 1 month.

Cook eggs low and slow with cottage cheese for creamy, fluffy texture. Warm tortillas before assembling to prevent cracking. Drain excess fat from sausage to avoid soggy burritos. When reheating frozen burritos, unwrap foil before microwaving and crisp in skillet or toaster oven for best texture.
