  • 1 ¼ cups water
  • 2 tablespoons rice vinegar (seasoned or unseasoned)
  • 1 tablespoon sugar (optional)
  • ½ teaspoon salt
  • 4 nori sheets (roasted)
  • ½ avocado, sliced into thin strips
  • ½ cucumber (English cucumber), cut into thin matchsticks
  • ½ carrot, julienned or shredded
  • 2 tablespoons cream cheese, softened
  • Optional: cooked scrambled egg strips, bell pepper strips, or steamed edamame
  • Soy sauce or tamari (for dipping)
  • Pickled ginger (optional, for serving)

Instructions

  1. Rinse 1 cup sushi rice under cold water until the water runs clear (about 2-3 minutes). Add rice and 1 ¼ cups water to a rice cooker or pot. Cook according to rice cooker instructions, or bring to a boil, cover, and simmer for 18 minutes. Let rest for 10 minutes off the heat.
  2. In a small bowl, mix 2 tablespoons rice vinegar, 1 tablespoon sugar, and ½ teaspoon salt. Microwave for 15 seconds to dissolve. Gently fold this mixture into the cooked rice using a cutting motion. Fan the rice as you mix to cool it quickly.
  3. While the rice cools, slice avocado, cucumber, and carrot into thin matchsticks. Let cream cheese soften at room temperature.
  4. Place a bamboo mat on a cutting board and cover it with plastic wrap. Fill a small bowl with water and a splash of vinegar.
  5. Place one nori sheet shiny side down on the mat. Wet your hands with the vinegar water. Spread about ¾ cup seasoned rice evenly over the nori, leaving a 1-inch border at the top edge. The rice layer should be about ¼ inch thick.
  6. Spread a thin line of cream cheese horizontally across the center of the rice. Layer avocado, cucumber, and carrot strips on top (3-4 strips per roll).
  7. Using the bamboo mat, lift the bottom edge of the nori over the filling. Tuck it tightly with your fingers, then continue rolling forward, applying gentle, even pressure. Wet the top border of the nori with a finger to seal the roll.
  8. Using a sharp, slightly wet knife, cut the roll in half first, then into 6-8 pieces. Wipe the knife clean between cuts for neat slices. Use a sawing motion, not a pressing motion.
  9. Arrange the sushi rolls in a lunchbox with a small container of soy sauce for dipping. Add a silicone cup of edamame or fruit on the side for a complete meal.

Notes

For best texture, use day-old sushi rice if possible. Don’t overfill rolls. Keep a bowl of water with vinegar nearby to prevent rice sticking. Cream cheese acts as a natural binder. Pack soy sauce separately to prevent sogginess. Store leftovers in an airtight container with a damp paper towel for up to 24 hours.
