  • 2 medium chicken breasts (about 12 ounces / 340 grams), diced into bite-sized pieces
  • 2 large eggs, beaten
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 green onions, sliced thinly (white and green parts)
  • 3 tablespoons soy sauce (low sodium recommended)
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil (canola or avocado oil recommended)
  • Optional add-ins: 1/2 cup frozen peas, 1/2 cup shredded carrots, diced bell peppers

Instructions

  1. Rice the cauliflower: Remove leaves and core from the cauliflower. Chop into chunks and pulse in a food processor until it resembles rice grains (about 4 cups). If using a box grater, grate the florets carefully. Set aside.
  2. Prep the chicken: Dice chicken breasts into small, bite-sized pieces (roughly 1/2-inch cubes). Season lightly with salt and pepper.
  3. Beat the eggs: In a small bowl, whisk the eggs until smooth. Set aside.
  4. Cook the chicken: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until golden and cooked through, about 5-7 minutes, stirring occasionally. Remove chicken to a plate and keep warm.
  5. Sauté aromatics: In the same pan, add garlic and ginger and sauté for about 30 seconds until fragrant—don’t let it burn!
  6. Scramble the eggs: Push garlic and ginger to the side, pour beaten eggs into the pan, and scramble gently until just set, about 1-2 minutes.
  7. Add cauliflower rice: Stir in the riced cauliflower, mixing well with eggs and aromatics. Cook for 4-5 minutes, stirring frequently, until cauliflower is tender but still has a slight bite.
  8. Combine chicken and season: Return cooked chicken to the pan. Add soy sauce and sesame oil, stirring everything together evenly. Cook for another 2 minutes to let flavors mingle.
  9. Finish with green onions: Remove from heat and stir in sliced green onions. Taste and adjust seasoning if needed.

Notes

Ensure cauliflower is well-drained if rinsed to avoid sogginess. Cook chicken in one batch to get a good sear and keep it juicy. Add eggs after sautéing aromatics for silky texture. Adjust soy sauce seasoning at the end to avoid oversalting. Reheat leftovers gently with a splash of water or soy sauce to refresh flavors.
