A quick and easy buffalo chicken dip served in a roasted pumpkin bread bowl, perfect for family meals or parties. This kid-friendly recipe combines creamy cheese, spicy buffalo sauce, and tender chicken with a subtle pumpkin sweetness.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (about 1 rotisserie chicken or 2 large chicken breasts)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup pumpkin puree
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 small sugar pumpkin (about 2–3 pounds)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • Crackers, tortilla chips, or crusty bread for dipping
  • Extra green onions for garnish
  • Extra shredded cheese for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Wash the sugar pumpkin, cut off the top, and scoop out the seeds and pulp. Rub the inside and outside with olive oil and sprinkle with salt. Place on a parchment-lined baking sheet.
  2. If using rotisserie chicken, remove skin and bones and shred the meat. If using raw chicken breasts, season with salt and pepper, bake at 375°F for 20-25 minutes until internal temperature reaches 165°F, then shred.
  3. In a large mixing bowl, combine softened cream cheese, buffalo wing sauce, ranch dressing, pumpkin puree, garlic powder, and onion powder. Mix until smooth. Fold in shredded chicken, cheddar cheese, and green onions. Season with salt and pepper to taste.
  4. Spoon the dip mixture into the hollowed-out pumpkin, filling to about 1/2 inch below the rim. Place the pumpkin lid on top (or cover loosely with foil).
  5. Bake for 30-35 minutes, until the pumpkin is tender when pierced with a fork and the dip is hot and bubbly. If the pumpkin browns too quickly, tent with foil for the last 10 minutes.
  6. Remove from oven and let cool for 5 minutes. Remove lid, garnish with extra cheese and green onions. Place on a serving platter surrounded by dippers. Serve immediately.

Notes

Choose a sugar pumpkin for best results; avoid large carving pumpkins. Don’t overbake to prevent collapse. The pumpkin flesh is edible and adds sweetness. For less spice, reduce buffalo sauce to 1/4 cup and increase ranch dressing. For more heat, add cayenne pepper. Can be assembled a day ahead and refrigerated before baking.
