Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Wash the peaches. No need to peel. Slice each peach in half, remove the pit, and cut each half into 6-8 slices about 1/2-inch thick.
  3. In a large mixing bowl, combine the sliced peaches, granulated sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Gently toss until evenly coated. Let sit for 5 minutes.
  4. In a medium mixing bowl, whisk together the flour, rolled oats, brown sugar, cinnamon, and salt. Add the cold, cubed butter. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
  5. Pour the peach filling into the prepared baking dish and spread into an even layer. Sprinkle the crisp topping evenly over the peaches, covering them completely. Do not press down.
  6. Place the dish on a baking sheet to catch any overflow. Bake at 350°F (175°C) for 40-45 minutes, or until the filling is bubbly and the topping is golden brown. If the topping browns too quickly, tent loosely with aluminum foil for the last 10-15 minutes.
