A simple, no-cook charcuterie board featuring crispy-edged pepperoni, creamy cheeses, crunchy crackers, and sweet grapes. Perfect for game days, parties, or lazy Sundays.

  • 8 oz pepperoni, sliced (thick-sliced from deli counter preferred)
  • 8 oz sharp cheddar cheese, block
  • 8 oz provolone cheese, sliced
  • 46 pieces Baby Bell or mini Gouda
  • 23 varieties crackers (e.g., Ritz-style, water crackers, pretzel crisps)
  • 1 cup red or green grapes
  • 1 cup marinated artichoke hearts, drained
  • 1 cup roasted red peppers, sliced
  • 1 cup mixed olives (Kalamata and Castelvetrano)
  • Honey, for drizzling
  • Fresh herbs (rosemary or thyme), for garnish (optional)

Instructions

  1. Prepare the ingredients: Slice the cheddar cheese into 1/2-inch cubes. Slice the provolone into thin strips or triangles. Drain the artichoke hearts and roasted red peppers, and pat them dry with paper towels. Rinse and dry the grapes.
  2. Choose your board: Select a large board or platter (at least 12×18 inches). If using a wooden board, ensure it’s clean and dry. Optionally, line with parchment paper.
  3. Place the bowls first: Set small bowls on the board. Fill one with mixed olives, one with honey, and one with marinated artichoke hearts. Position them in a triangle pattern.
  4. Add the cheeses: Arrange the cheddar cubes in a small cluster near one bowl. Place the provolone ribbons next to them. Tuck the Baby Bell or mini Gouda pieces around the edges, leaving space between cheese types.
  5. Add the pepperoni: Fold each pepperoni slice in half and arrange in a loose pile or overlapping line. Create a ‘river’ of pepperoni diagonally across the board. Leave a few slices unfolded for variety.
  6. Add the crackers: Fill in the gaps with crackers in small clusters, mixing different types together.
  7. Add the fruits and vegetables: Scatter the grapes in small bunches around the board. Tuck the roasted red pepper strips between cheese and pepperoni.
  8. Drizzle and garnish: Drizzle honey over the cheddar cubes and a few pepperoni slices. Sprinkle fresh rosemary or thyme sprigs around the board.
  9. Serve immediately: Place the board in the center of the table with small plates and napkins.

Notes

Prep all ingredients a day ahead but assemble just before serving to keep crackers crisp. Take cheeses out of fridge 30 minutes before serving for best flavor. Pat wet ingredients dry to avoid sogginess. For crispy pepperoni, bake at 350°F for 3-4 minutes.
