A quick and easy summer dessert featuring fresh strawberries, blueberries, and bite-sized shortcake pieces assembled on skewers with whipped cream. Perfect for parties and light summer treats.

Ingredients

  • Fresh strawberries, hulled and halved
  • Fresh blueberries, washed and dried
  • Shortcake biscuits, store-bought or homemade, cut into 1-inch cubes
  • Whipped cream, lightly sweetened
  • Powdered sugar (optional, for dusting)
  • Wooden skewers, about 6 inches long

Instructions

  1. Gently rinse the strawberries and blueberries under cold water. Pat dry with a clean towel. Hull the strawberries by removing the green tops, then slice them in halves or quarters depending on their size.
  2. Slice your shortcake biscuits into approximately 1-inch cubes. Aim for bite-sized pieces that’ll stack nicely on the skewers without crumbling too much.
  3. Start by threading a piece of shortcake onto the skewer, followed by a strawberry half, then a blueberry, and repeat until you have 3-4 layers or the skewer is full. Be gentle to avoid squishing the fruit or breaking the biscuit.
  4. Use a spoon or piping bag to add a dollop of whipped cream to the top of each skewer after assembly. This step can be done just before serving to keep the biscuit from getting soggy.
  5. Lightly sprinkle powdered sugar over the skewers for a pretty finish (optional).
  6. Serve immediately to enjoy fresh and crumbly shortcakes with juicy berries.

Assemble skewers just before serving to prevent soggy shortcakes. For sweeter berries, toss with a teaspoon of sugar and let sit for 10 minutes before assembling. Substitute raspberries or blackberries if strawberries are out of season. Use coconut whipped cream for dairy-free and gluten-free biscuits for gluten-free options.
