Instructions

  1. Preheat the oven to 350°F (175°C) and position a rack in the center.
  2. Peel and slice the peaches into about 1/2-inch thick wedges.
  3. In a large bowl, combine peach slices, lemon juice, cornstarch, granulated sugar, and cinnamon. Stir gently until peaches are evenly coated.
  4. Pour the peach mixture into a prepared 8×8-inch baking dish, spreading evenly.
  5. In a separate bowl, mix rolled oats, all-purpose flour, brown sugar, cinnamon (optional), and salt.
  6. Add cold, cubed butter to the dry ingredients and cut in with a pastry cutter, forks, or fingers until mixture resembles coarse crumbs with some pea-sized bits.
  7. Evenly sprinkle the oat topping over the peach filling without pressing down.
