  • 1 pound breakfast sausage

Instructions

  1. Cook the sausage: Heat a large skillet over medium-high heat. Add the ground breakfast sausage and cook, breaking it apart, until browned and cooked through (6-8 minutes). Transfer to a paper towel-lined plate to drain and cool completely.
  2. Cook the hash browns: In the same skillet, add 1 tablespoon butter or oil over medium heat. Add the thawed and dried hash browns in an even layer. Cook without stirring for 3-4 minutes, then flip and cook another 3-4 minutes until golden and crispy. Season with salt and pepper. Transfer to a plate and let cool.
  3. Scramble the eggs: Crack the 12 eggs into a mixing bowl and whisk until combined. Season with salt and pepper. Reduce skillet heat to medium-low and add another tablespoon of butter. Pour in the eggs and let set for 30 seconds, then gently stir until just set but still soft and glossy (3-4 minutes). Spread on a plate to cool completely.
  4. Cool everything completely: Let all fillings reach room temperature (about 10-15 minutes) before assembly to prevent soggy tortillas.
  5. Set up assembly station: Lay out 10 tortillas on a clean surface. Place a small bowl of water nearby for sealing. Have cheese, sausage, hash browns, and eggs within reach.
  6. Assemble the burritos: Place about ¼ cup scrambled eggs in the center of a tortilla, slightly closer to the bottom edge. Top with a spoonful of sausage, a handful of hash browns, and about 2 tablespoons of cheese. Fold the bottom edge up over the filling, fold in the sides, and roll tightly away from you. Dip your finger in water and run it along the top edge to seal. Place seam-side down.
  7. Repeat for all 10 burritos.
  8. Wrap and freeze: Wrap each burrito tightly in aluminum foil or parchment paper. Place on a baking sheet in a single layer and freeze for 1-2 hours until solid. Transfer to a freezer-safe zip-top bag, squeeze out air, seal, and label with the date.
