  • 2 cups (480 ml) heavy whipping cream, chilled (or coconut cream for dairy-free)
  • 1 cup (240 g) small-curd cottage cheese, blended smooth (optional)
  • 1/4 cup (30 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 6 cups (about 300 g) angel food cake or pound cake, cubed
  • Powdered sugar for dusting or in whipped cream
  • Lemon zest (optional)
  • Mint leaves for garnish

Instructions

  1. Rinse strawberries and blueberries thoroughly. Slice the strawberries thinly and set aside in separate bowls.
  2. In a chilled large bowl, pour 2 cups of heavy whipping cream. Add 1/4 cup powdered sugar and 1 teaspoon vanilla extract. Beat on medium-high speed until medium peaks form.
  3. If using cottage cheese, blend 1 cup small-curd cottage cheese until smooth, then gently fold into whipped cream.
  4. Cut about 6 cups of angel food or pound cake into 1-inch cubes. Optionally, toast them in the oven at 350°F (175°C) for 5 minutes for slight crispness.
  5. In serving glasses or a trifle bowl, layer cake cubes, spoon a generous layer of whipped cream, add sliced strawberries, then another layer of cake, whipped cream, and finish with blueberries on top. Repeat layers as desired.
  6. Sprinkle with lemon zest and garnish with fresh mint leaves before chilling.
  7. Refrigerate the dessert for at least 1 hour to let flavors meld and cake soak up the cream.
  8. Bring the dessert out 10 minutes before serving to take the chill off slightly.

Notes

Keep ingredients and equipment cold for best whipped cream results. Do not overwhip cream to avoid graininess. You can skip cottage cheese if short on time. For gluten-free, substitute cake with almond flour cake or gluten-free cookies. For dairy-free, use coconut cream and vegan cake. Assemble ahead and refrigerate, but cake may soften over time.
