  • Olive oil (extra virgin recommended)
  • Honey (about 1/4 cup / 60 ml)
  • Lemon juice (freshly squeezed)
  • Lime juice (freshly squeezed)
  • Salt and pepper (to taste)
  • Garlic powder (optional)
  • Crackers or baguette slices (for serving)
  • Cooked shrimp (peeled and deveined, chilled)
  • Turkey or chicken sausage (sliced, optional)

Instructions

  1. Rinse all fresh produce under cold water. Slice cucumbers into thin rounds, halve cherry tomatoes, and finely chop red bell peppers. Tear fresh basil leaves into bite-sized pieces. Drain mozzarella balls and pat dry with a paper towel. Set all aside in separate bowls for easy assembly.
  2. If using fresh corn, grill on medium-high heat until lightly charred, about 8-10 minutes, turning occasionally. Allow to cool slightly, then cut kernels off the cob. For sausage, slice into bite-sized rounds and grill until browned and cooked through. Alternatively, boil corn and pan-fry sausage with a little olive oil if no grill is available.
  3. In a small bowl, combine softened cream cheese with honey and fresh blueberries. Mash blueberries gently into the cream cheese, leaving some whole for texture. Add a squeeze of lemon juice and a pinch of salt. Chill until ready to serve.
  4. Thread cherry tomatoes, mozzarella balls, and basil leaves onto small skewers or toothpicks. Drizzle with olive oil and sprinkle with salt and pepper. Optionally, add a few drops of balsamic glaze. Prepare just before serving.
  5. In a bowl, mix grilled corn kernels, diced red bell peppers, sliced green onions, olive oil, and lime juice. Season with salt and pepper. Toss gently and refrigerate until serving.
  6. Arrange skewers, dip bowls, corn salad, and extra crackers or sliced baguette on festive platters. Garnish with fresh blueberries and basil sprigs. Optionally include chilled cooked shrimp on the side.

Pat dry mozzarella to avoid soggy skewers. Prepare dips and salads ahead to save time and enhance flavor. Grill corn and sausage just enough to get char marks without drying out.
