  • 2 lbs boneless, skinless chicken thighs or breasts (thighs recommended)
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 large lemon (about 3 tablespoons)
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano or 1 tablespoon fresh oregano, finely chopped
  • 1 teaspoon ground cumin (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 cup plain Greek yogurt (full-fat preferred)
  • 1 medium cucumber, peeled, seeded, and grated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, finely chopped or 1 teaspoon dried dill
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 2 cups cooked rice or quinoa (about 1 cup uncooked)
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped cucumber
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley or mint for garnish

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin (if using), salt, and pepper. Add chicken thighs and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, ideally 4 hours or overnight.
  2. Grate the peeled cucumber and squeeze out excess moisture using a clean kitchen towel or cheesecloth. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Stir well and refrigerate until ready to serve.
  3. Heat a large non-stick skillet or grill pan over medium-high heat. Add marinated chicken in a single layer, discarding excess marinade. Cook 5-7 minutes per side until internal temperature reaches 165°F (74°C) and chicken is golden. Let rest 5 minutes, then slice.
  4. Cook rice or quinoa according to package instructions and fluff with a fork.
  5. Divide cooked grains among bowls or meal prep containers. Top with sliced chicken, cherry tomatoes, chopped cucumber, Kalamata olives, and feta cheese. Add a dollop of tzatziki and garnish with parsley or mint.
  6. Cover and refrigerate if meal prepping. Consume within 4-5 days.

Notes

Marinate chicken as long as possible for best flavor but no more than 24 hours to avoid mushy texture. Squeeze excess moisture from grated cucumber to prevent watery tzatziki. Let chicken rest after cooking to keep it juicy. If tzatziki thickens after refrigeration, stir in a teaspoon of cold water or lemon juice before serving.
