Easy Flavor-Packed Crockpot Salsa Chicken Tacos

A simple, delicious crockpot recipe for tender, juicy salsa chicken perfect for quick weeknight tacos. Minimal prep and maximum flavor with easy ingredients.

  • 2 pounds boneless, skinless chicken breasts
  • 1 ½ cups medium-spiced chunky salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt to taste
  • Freshly ground black pepper to taste
  • Juice of 1 fresh lime
  • Chopped cilantro (optional, for garnish)
  • Taco shells or soft tortillas
  • Optional: 15 oz drained black beans
  • Optional: 1 cup frozen corn
  • Optional toppings: shredded cheese, sour cream, shredded lettuce, diced tomatoes, sliced avocado, cotija cheese, pickled onions, radishes

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. In a small bowl, mix ground cumin, chili powder, garlic powder, onion powder, salt, and black pepper.
  3. Rub the spice mix evenly over both sides of the chicken breasts.
  4. Place the seasoned chicken breasts flat in the crockpot.
  5. Pour the salsa evenly over the chicken breasts, covering them well but not swimming in it.
  6. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken shreds easily with a fork.
  7. Remove chicken and shred using two forks or shredding claws.
  8. Return shredded chicken to the crockpot and mix with salsa juices; keep warm for 10 minutes if possible.
  9. Just before serving, squeeze fresh lime juice over the shredded chicken and stir.
  10. Warm taco shells or tortillas according to package directions.
  11. Assemble tacos by filling shells with shredded salsa chicken and garnish with cilantro, cheese, sour cream, or preferred toppings.

Notes

Use a medium-spiced chunky salsa for best texture and flavor. Avoid stirring during cooking to keep chicken juicy. Add fresh lime juice after cooking to brighten flavors. If liquid is too watery after shredding, cook uncovered on high for 15-20 minutes to reduce. Chicken thighs can be used as an alternative for richer flavor. Optional add-ins include black beans, corn, jalapeños, or cheese. Store leftovers in airtight container in fridge up to 4 days or freeze up to 3 months.
