  • 4 cups mini pretzels or pretzel twists
  • 1 cup raw, shelled pumpkin seeds (pepitas)
  • 1/4 cup unsalted butter (4 tablespoons), melted
  • 1/4 cup packed brown sugar (light or dark)
  • 2 tablespoons pure maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt (flaky sea salt or kosher salt)
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries or chopped dried apples (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine the pretzels and pumpkin seeds. Toss to mix evenly.
  3. In a small saucepan over medium heat, melt the butter. Add the brown sugar, maple syrup, cinnamon, nutmeg, and salt. Whisk until smooth and the sugar has dissolved, about 2-3 minutes. Remove from heat and stir in the vanilla extract.
  4. Pour the warm coating over the pretzel mixture. Use a spatula to gently fold until all pieces are evenly coated.
  5. Spread the mixture in a single layer on the prepared baking sheet.
  6. Bake for 12-15 minutes, stirring halfway through, until golden and fragrant. Watch closely after 10 minutes to prevent burning.
  7. Let cool completely on the baking sheet, at least 30 minutes. If using dried fruit, stir it in after about 10 minutes of cooling.
  8. Once cooled, break apart any large clusters into bite-sized pieces.

Notes

Toast raw pumpkin seeds in a dry pan for 2-3 minutes before adding for extra crunch. Watch the oven closely to avoid burning. Let the mix cool completely for the best crunchy texture. Store in an airtight container at room temperature for up to a week. To re-crisp, spread on a baking sheet and bake at 300°F for 5 minutes. For a spicy version, add 1/2 teaspoon cayenne pepper to the coating. For a chocolate drizzle, melt dark or white chocolate and drizzle over cooled mix.
