  • 2 cups cooked, shredded chicken (rotisserie or canned)
  • 1 1/2 cups shredded cheddar cheese (plus 1/4 cup for topping)
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons chopped green onions (for garnish)
  • Tortilla chips, celery sticks, or carrot sticks (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Soften the cream cheese by letting it sit at room temperature for 30 minutes, or microwave on low power in 10-15 second intervals until soft.
  3. In a large mixing bowl, combine the softened cream cheese, ranch dressing, and buffalo hot sauce. Beat with a hand mixer on medium speed until smooth and well combined (about 2 minutes).
  4. Add the shredded chicken and fold it into the cream cheese mixture until evenly coated.
  5. Fold in 1 1/2 cups of shredded cheddar cheese (and blue cheese if using) until evenly distributed.
