  • 1 can (15 ounces / 425 grams) black beans, drained and rinsed
  • 1.5 cups (240 grams) frozen corn
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, plus more to taste
  • Black pepper to taste
  • 2 tablespoons fresh lime juice
  • Optional: 1 chipotle pepper in adobo sauce, minced, plus 1 teaspoon adobo sauce
  • 1/2 cup (120 milliliters) sour cream
  • 2 tablespoons fresh lime juice (for crema)
  • 1 teaspoon lime zest
  • 1 pinch salt (for crema)
  • Crushed tortilla chips or strips, for topping
  • 1/4 cup fresh cilantro, chopped, for topping
  • 1 large avocado, diced, for topping
  • 1/2 cup shredded Monterey Jack or cheddar cheese, for topping (optional)

Instructions

  1. Bloom the spices: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds. Stir in chili powder, cumin, smoked paprika, and oregano; cook for 1 minute until fragrant.
  2. Layer the crockpot: Transfer onion-spice mixture to a 6-quart slow cooker. Add fire-roasted tomatoes (with juices), black beans, corn, and chicken broth. Stir to combine. Nestle chicken breasts into the liquid. Season with 1 teaspoon salt and black pepper. Add chipotle pepper if using.
  3. Slow cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken reaches 165°F (74°C) and shreds easily.
  4. Shred the chicken: Transfer chicken to a cutting board, let rest 2-3 minutes, then shred into bite-sized pieces.
  5. Finish the soup: Return shredded chicken to the slow cooker. Stir in 2 tablespoons fresh lime juice. Adjust seasoning with salt or more lime juice as needed.
  6. Make the lime crema: In a small bowl, whisk together sour cream, 2 tablespoons lime juice, lime zest, and a pinch of salt until smooth. Refrigerate until ready to serve.
  7. Assemble and serve: Ladle soup into bowls. Drizzle with lime crema, then top with crushed tortilla chips, diced avocado, fresh cilantro, and shredded cheese if using. Serve immediately.

Notes

Don’t skip blooming the spices—it deepens the flavor. Use low-sodium broth to control salt. Add lime juice at the end for brightness. Drizzle crema over individual bowls, not the whole pot, to prevent curdling. For a thicker soup, mash some black beans against the side of the crockpot.
