  • 1.5 pounds boneless, skinless chicken breasts (about 2–3 breasts; thighs work too)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained (or 1.5 cups frozen corn, no need to thaw)
  • 1 can (10 oz) red enchilada sauce (mild or medium)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder in a pinch)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream or Greek yogurt (full-fat preferred)
  • Juice of 1 lime (about 2 tablespoons)
  • 1 teaspoon lime zest
  • Pinch of salt
  • Fresh cilantro, chopped (for topping)
  • Diced avocado (for topping)
  • Tortilla chips or strips (for topping)
  • Shredded Mexican blend cheese (for topping)
  • Extra lime wedges (for topping)

Instructions

  1. Prep your ingredients first: dice the onion, mince the garlic, drain and rinse the black beans, drain the corn.
  2. Layer everything in the crockpot: place the chicken breasts at the bottom. Add the diced onion, minced garlic, black beans, corn, fire-roasted tomatoes, and enchilada sauce on top.
  3. Add the seasonings and broth: sprinkle the cumin, chili powder, smoked paprika, salt, and pepper over everything. Pour in the chicken broth, making sure the liquid covers most of the ingredients. Don’t stir yet.
  4. Cook on low for 6-7 hours or high for 3-4 hours. The chicken is done when it shreds easily with a fork and reaches an internal temperature of 165°F.
  5. Shred the chicken: carefully remove the chicken breasts to a cutting board (or use two forks right in the pot). Shred the meat and return it to the soup. Stir everything together gently.
  6. Taste and adjust: ladle a small amount into a bowl and taste it. Add more salt, chili powder, or cayenne as needed.
  7. Make the lime crema: combine the sour cream (or Greek yogurt), lime juice, lime zest, and a pinch of salt in a small bowl. Stir until smooth. Taste and adjust.
  8. Serve and garnish: ladle the soup into bowls. Drizzle a generous spoonful of lime crema on top. Add your favorite toppings—cilantro, avocado, tortilla chips, cheese. Serve immediately.

Notes

Don’t skip the fire-roasted tomatoes—they add smoky depth. Shred the chicken right in the pot to save a dish. If soup is too thin, let it simmer on high with the lid off for 15-20 minutes. Make the crema ahead of time for better flavor. Store crema separately from soup to prevent curdling when reheated.
