  • 1 cup shredded cheddar cheese
  • 1 tablespoon unsalted butter
  • 1/4 cup crumbled blue cheese (optional)

Instructions

  1. Prep your chicken: If using canned chicken, drain well and shred with a fork. If using rotisserie chicken, remove skin and bones, then shred. You want about 2 cups of shredded chicken.
  2. Soften the cream cheese: Take cream cheese out of fridge 20 minutes before starting. Cut into cubes for faster melting. If forgotten, microwave in 10-second bursts until soft but not melted.
  3. Combine the base: In your crockpot, add shredded chicken, cubed cream cheese, buffalo wing sauce, ranch dressing, and butter. Stir to combine as best you can.
  4. Add the cheese: Stir in shredded cheddar cheese. Reserve about 1/4 cup for topping later if desired.
  5. Cook on low: Cover and cook on low for 2 to 3 hours. Stir every 30-45 minutes, especially during the first hour, to help cream cheese melt and incorporate. For a quicker option, cook on high for 1 to 1.5 hours, stirring more frequently.
  6. Check the consistency: After about 2 hours, stir well. Dip should be smooth, creamy, and well-combined. If too thick, add a splash of milk or extra ranch dressing.
  7. Finish and garnish: Switch crockpot to warm. Sprinkle reserved cheddar cheese on top, along with crumbled blue cheese if using. Let sit 5-10 minutes. Garnish with chopped green onions or fresh chives if desired.
  8. Serve immediately: Keep crockpot on warm while serving. Stir occasionally to maintain texture.
