  • 2 pounds boneless, skinless chicken breasts (about 45 breasts)
  • 1 packet ranch seasoning mix (about 1 ounce)
  • ½ cup chicken broth (low-sodium if desired)
  • 8 slices bacon, cooked and crumbled
  • 8 slices provolone cheese
  • 12 slider buns (such as King’s Hawaiian sweet rolls)
  • 2 tablespoons butter, melted
  • ½ teaspoon garlic powder
  • 1 teaspoon dried parsley (optional)

Instructions

  1. Cook the bacon first. Preheat oven to 400°F. Line a baking sheet with foil, lay bacon strips in a single layer, and bake for 15-18 minutes until crispy. Transfer to a paper towel-lined plate to drain, then crumble into small pieces. Set aside.
  2. Place chicken breasts in the bottom of a crockpot. Sprinkle the entire packet of ranch seasoning over the top, then pour chicken broth around the edges. Do not stir.
  3. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is fork-tender and shreds easily.
  4. Using two forks, shred the chicken directly in the crockpot. Stir into the juices to coat evenly. If dry, add another tablespoon of chicken broth.
  5. Preheat oven to 350°F. Slice slider buns in half horizontally, keeping them connected as a whole slab. Place bottom half in a 9×13 baking dish.
  6. Spoon shredded chicken evenly over bottom buns. Sprinkle crumbled bacon on top. Lay provolone slices over bacon, tearing to fit if needed. Place top half of buns over cheese.
  7. In a small bowl, mix melted butter, garlic powder, and dried parsley. Brush mixture generously over tops of buns.
  8. Cover dish loosely with foil and bake for 15 minutes. Remove foil and bake for another 5-7 minutes, until tops are golden and cheese is melted and bubbly.
  9. Serve immediately. Pull sliders apart and enjoy warm.

Notes

For best texture, cook chicken low and slow. Toast bottom buns under broiler for 1-2 minutes before adding chicken to prevent sogginess. Let bacon cool completely before crumbling. Chicken is done when it shreds easily with a fork. Can be made ahead: cook and shred chicken, crumble bacon, store separately in fridge for up to 1 day, then assemble and bake before serving.
