  • 4 cups broccoli florets (about 300 grams)
  • 1 tablespoon olive oil
  • 1/2 cup (120 ml) soy sauce (low-sodium preferred)
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • Sesame seeds (optional, for garnish)
  • Green onions, thinly sliced (for topping)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, whisk together soy sauce, honey, minced garlic, grated ginger, rice vinegar, cornstarch mixed with water. Set aside.
  3. Toss broccoli florets with olive oil and a pinch of salt in a medium bowl. Spread evenly on one side of a rimmed baking sheet.
  4. Pat chicken thighs dry with paper towels. Brush or spoon half the teriyaki glaze over the skin side of each thigh. Season lightly with salt and pepper.
  5. Place chicken thighs skin-side up on the other side of the baking sheet, leaving space between pieces.
  6. Roast in the oven for 20 minutes. Remove and brush chicken with remaining glaze. Toss broccoli gently to coat with pan juices.
  7. Return the sheet to the oven and roast for another 10-12 minutes until chicken reaches an internal temperature of 165°F (74°C) and broccoli edges are charred. Rotate pan halfway through cooking for even browning.
  8. Remove from oven and sprinkle sesame seeds and sliced green onions over chicken and broccoli.
  9. Let chicken rest for 5 minutes before serving.

Pat chicken dry to ensure crispy skin. Roast at high heat (425°F) for best results. Avoid overcrowding the pan to maintain crispiness. Brush glaze twice during cooking to build flavor without burning. If broccoli browns too fast, tent loosely with foil.
