  • 1 lb ground chicken (85% lean preferred)
  • 2 tablespoons vegetable oil or avocado oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup water chestnuts, finely chopped
  • 2 green onions, thinly sliced (white and green parts separated)
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha or chili garlic sauce (optional)
  • 1 teaspoon brown sugar
  • 1 head iceberg lettuce, leaves separated and washed
  • Optional garnishes: chopped cilantro, extra green onions, crushed peanuts

Instructions

  1. Gently peel away the iceberg lettuce leaves, rinse under cold water, and pat dry with paper towels. Set aside.
  2. Finely dice the onion, mince garlic, grate ginger, chop water chestnuts, and slice green onions (keep whites and greens separate).
  3. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the ground chicken, breaking it apart with a spatula. Cook for about 5 minutes until it starts to brown but isn’t fully cooked yet.
  4. Add the chopped onion, garlic, ginger, and the white parts of green onions. Sauté with the chicken for another 3-4 minutes until the onions soften and the chicken is cooked through.
  5. Add the chopped water chestnuts and cook for 1-2 more minutes. If the mixture looks dry, splash in a tablespoon of water to loosen it up.
  6. In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, sesame oil, sriracha (if using), and brown sugar until smooth.
  7. Pour the sauce over the chicken mixture and stir well to coat everything evenly. Reduce heat to low and let it simmer gently for 2-3 minutes to thicken the sauce and meld flavors.
  8. Stir in the green parts of the sliced green onions, then remove from heat.
  9. Spoon the warm chicken mixture into the prepared lettuce leaves. Garnish with fresh cilantro or crushed peanuts if desired and serve immediately.

Notes

Use ground chicken with some fat content (85% lean) for juiciness. Avoid overcrowding the pan to ensure chicken crisps instead of steams. Break up the meat frequently for smaller crispy pieces. Toast aromatics for deeper flavor. Adjust sauce thickness by simmering longer or adding water. Prep lettuce just before serving to keep leaves crisp. Leftover filling can be refrigerated for up to 3 days or frozen for 2 months.
