  • 34 medium garlic scapes, finely chopped
  • 1 teaspoon freshly squeezed lemon juice
  • 1/4 teaspoon sea salt, or to taste
  • Freshly ground black pepper, a few grinds (optional)
  • 1 tablespoon finely minced fresh herbs like parsley or chives (optional)

Instructions

  1. Soften the butter by leaving it out at room temperature for about 30 minutes until soft but not melted.
  2. Rinse and pat dry the garlic scapes. Finely chop 3 to 4 medium scapes into small pieces.
  3. In a mixing bowl, add the softened butter, chopped garlic scapes, lemon juice, sea salt, and black pepper if using. Add herbs if desired.
  4. Use a fork or spatula to mash and stir everything together until well incorporated and creamy with flecks of green.
  5. Scoop the butter onto plastic wrap or parchment paper and roll into a log about 1.5 inches (4 cm) in diameter. Twist the ends to seal.
  6. Chill the butter log in the refrigerator for at least one hour until firm.
  7. Slice and serve immediately or store in the refrigerator for up to 2 weeks or freeze for up to 3 months.

Notes

Use room temperature butter for easy mixing. Freshly squeezed lemon juice brightens the flavor. Chill butter well before slicing to avoid squishing. Optional herbs and spices can be added for variation. Can substitute dairy-free butter for a vegan version.
