Easy Cozy Cinnamon Apple Crisp with Oat Streusel

A perfectly textured apple crisp with a crunchy oat streusel topping. The apples are chopped, not sliced, to hold their shape, and the melted butter streusel stays crispy and clumpy. This is pure, uncomplicated comfort food.

Ingredients

Scale
  • 6 cups apples, peeled and chopped (about 6 medium apples)
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup (120g) old-fashioned rolled oats
  • 3/4 cup (90g) all-purpose flour
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (113g) unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine the chopped apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are completely coated. Let the mixture sit for about 5 minutes.
  3. In a separate large bowl, whisk together the rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Pour the melted butter over the dry ingredients and mix with a fork or your fingers until crumbly and clumpy (like wet sand with some pea-sized clumps). Do not overmix.
  4. Pour the apple mixture into the prepared baking dish and spread into an even layer. Sprinkle the oat streusel evenly over the top. Do not press it down.
  5. Place the dish on a baking sheet to catch any bubble-overs. Bake for 40-45 minutes, or until the streusel is deep golden brown and the apple filling is bubbly and thick around the edges.
  6. Let the crisp cool on a wire rack for at least 15-20 minutes before serving. This allows the filling to set up.

Notes

Chop apples into 1-inch chunks, not thin slices, to avoid mushiness. The 15-20 minute rest after baking is essential for the filling to set. For a gluten-free version, use a 1:1 gluten-free flour blend and certified gluten-free oats. For a vegan version, use plant-based butter and ensure sugar is vegan-friendly.
