This easy classic banana bread requires no mixer and comes together in under 15 minutes. Made with simple ingredients like butter, sugar, eggs, bananas, and flour, it’s incredibly moist and perfect for busy weeknights or bake sales.

  • 3 ripe bananas, mashed (about 1 ½ cups or 340g)
  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (85g) chocolate chips (optional)
  • ½ cup (60g) chopped walnuts or pecans (optional)
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. For extra insurance, line it with parchment paper, leaving a little overhang on the long sides.
  2. Mash the 3 ripe bananas in a large mixing bowl with a fork or potato masher until mostly smooth with a few small lumps.
  3. Pour the melted butter over the mashed bananas and stir until combined.
  4. Add the sugar, room-temperature egg, and vanilla extract. Stir until smooth and slightly glossy.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Fold gently with a spatula until just combined—do not over-mix. A few lumps are fine.
  6. If using, fold in chocolate chips, nuts, or cinnamon with 3-4 turns of the spatula.
  7. Pour the batter into the prepared pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil for the last 15-20 minutes.
  9. Cool in the pan for 10 minutes, then turn out onto a cooling rack. Let cool completely before slicing (at least 30 minutes).

Notes

For best results, use very ripe bananas with brown spots. Do not over-mix the batter to avoid tough bread. Let the bread cool completely before slicing for clean slices. If the top browns too quickly, tent with foil.
