  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a skillet over medium heat and brown the sausage, breaking it up with a spatula, about 6-8 minutes. Remove sausage with a slotted spoon, leaving fat in the skillet.
  3. Add chopped onions to the skillet and cook in the sausage fat until softened and translucent, about 3-4 minutes.
  4. Cube the bread into roughly 1-inch pieces. Toast lightly if fresh to prevent sogginess.
  5. In a large mixing bowl, whisk together eggs, milk, melted butter, garlic powder, Dijon mustard, salt, and pepper until combined and slightly frothy.
  6. Add the cooked sausage, sautéed onions, cubed bread, and 1 1/2 cups shredded cheese to the egg mixture. Stir gently to coat evenly without breaking the bread too much.
  7. Pour the mixture into a greased 9×13-inch baking dish. Spread evenly and sprinkle the remaining 1/2 cup cheese on top.
  8. Cover the dish with plastic wrap or foil and refrigerate overnight for at least 6 hours and up to 24 hours.
  9. Remove the cover and bake uncovered for 45-55 minutes, or until the top is golden brown and a knife inserted near the center comes out clean.
