Ingredients

Scale
  • Mini bagels (plain or whole wheat), sliced in half
  • Tomato sauce or marinara sauce, about 1 tablespoon per bagel half
  • 1 cup shredded mozzarella cheese (freshly shredded preferred)
  • ½ cup sharp cheddar cheese, shredded (optional but recommended)
  • Italian seasoning (blend of dried basil, oregano, thyme, rosemary), about ½ teaspoon per 8 bagel halves
  • Garlic powder, about ¼ teaspoon per 8 bagel halves
  • Olive oil, about 1 teaspoon per bagel half for brushing
  • Optional toppings: mini pepperoni slices, diced bell peppers, sliced black olives, mushrooms (pre-cooked if watery)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Slice mini bagels in half horizontally and arrange cut side up on the baking sheet.
  3. Lightly brush each bagel half with about 1 teaspoon of olive oil for a crispier base.
  4. Spread about 1 tablespoon of tomato sauce evenly over each bagel half, leaving a small border around the edges.
  5. Sprinkle garlic powder and Italian seasoning lightly over the sauce (approximately ¼ teaspoon garlic powder and ½ teaspoon Italian seasoning per 8 bagel halves).
  6. In a mixing bowl, combine 1 cup shredded mozzarella and ½ cup sharp cheddar cheese.
  7. Top each bagel half with about 2 tablespoons of the cheese blend. Add optional toppings if desired.
  8. Bake in the preheated oven for 10-12 minutes until cheese is melted, bubbling, and starting to turn golden brown.
  9. Optional: Broil for 1-2 minutes for extra bubbly cheese, watching carefully to avoid burning.
  10. Remove from oven and let cool for 2-3 minutes before serving or packing.

Notes

Use freshly shredded cheese for better melting. Avoid overloading sauce to prevent sogginess. Brush bagels with olive oil for a crispier crust. Pre-cook watery veggies to avoid sogginess. Can be frozen before or after baking; reheat in oven or toaster oven for best texture.
