Easy Caramelized Delicata Squash with Maple Tahini

  • 2 tablespoons olive oil

  • 2 tablespoons maple syrup (for drizzle)
  • 1 tablespoon fresh lemon juice
  • 23 tablespoons water
  • Pinch of salt
  • 2 tablespoons toasted pumpkin seeds (optional garnish)
  • 2 tablespoons fresh parsley or cilantro, chopped (optional garnish)
  • Crumbled feta or goat cheese (optional garnish)
  • Pinch of red pepper flakes (optional garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly, then trim off the ends. Slice each squash in half lengthwise and scoop out the seeds and stringy pulp with a spoon.
  3. Place each half cut-side down and slice crosswise into 1/2-inch thick half-moons.
  4. In a large bowl, toss the sliced squash with olive oil, 1 tablespoon maple syrup, kosher salt, and black pepper until evenly coated.
  5. Arrange the squash in a single layer on the prepared baking sheet, ensuring pieces are not overlapping.
  6. Roast for 10 minutes, then flip each piece. Return to the oven and roast for another 10-15 minutes, until tender and deeply caramelized with golden-brown edges.
  7. While the squash roasts, make the maple tahini drizzle: In a small bowl, whisk together tahini, 2 tablespoons maple syrup, and lemon juice until smooth. Slowly add water, 1 tablespoon at a time, whisking constantly, until the sauce reaches a drizzle-able consistency (like heavy cream). Add a pinch of salt and whisk again. Adjust lemon or maple to taste.
  8. Transfer the roasted squash to a serving platter. Drizzle generously with the maple tahini sauce. Sprinkle with optional garnishes like toasted pumpkin seeds, fresh herbs, crumbled cheese, or red pepper flakes. Serve immediately.

Notes

For best caramelization, do not crowd the pan; use two baking sheets if needed. Flipping the squash halfway through is essential for even browning. The tahini sauce can be made ahead and stored in the fridge; whisk in a splash of water before using if it thickens. For a spicy twist, add 1/4 teaspoon cayenne pepper to the tahini sauce. Leftover roasted squash is great on salads or in grain bowls.
