  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained (or 1½ cups frozen corn)
  • 1 can (14.5 oz) diced tomatoes with green chiles (like Rotel)
  • 2 cups beef broth (low-sodium recommended)

Instructions

  1. Brown the beef: Place a large pot over medium-high heat. Add the ground beef and cook, breaking it apart, until browned and no longer pink (about 6-8 minutes). Drain excess fat, leaving about 1 tablespoon.
  2. Add the seasoning: Sprinkle taco seasoning over the beef and stir to coat. Cook for 1 minute to bloom the spices.
  3. Add the canned goods: Stir in the drained black beans, drained corn, and undrained diced tomatoes with green chiles.
  4. Add the broth: Pour in the beef broth and stir. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 15-20 minutes, stirring occasionally. Taste and adjust seasoning if needed.
  5. Serve and garnish: Ladle into bowls and let guests customize with optional toppings like shredded cheese, sour cream, cilantro, crushed tortilla chips, diced avocado, and lime wedges.

Notes

For a slow cooker version, brown the beef on the stovetop first, then transfer everything to the slow cooker. Cook on low for 4-6 hours or high for 2-3 hours. The soup thickens as it sits; add more broth if needed. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
