  • 1 packet taco seasoning (about 1 ounce)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) diced tomatoes (fire-roasted recommended)
  • 1 can (10 ounces) Rotel tomatoes and green chilies (optional)
  • 2 cups beef broth (or chicken or vegetable broth)

Instructions

  1. Prep your ingredients (5 minutes): Open all your cans. Drain and rinse the black beans. Drain the corn. Set everything aside. If using ground beef and want to brown it, do that now in a skillet over medium-high heat until no longer pink (about 5-7 minutes). Drain any excess fat.
  2. Layer ingredients in the crockpot (2 minutes): Add the ground beef (raw or cooked), taco seasoning, black beans, corn, diced tomatoes (with their juice), Rotel (if using), and beef broth. Stir everything together until the seasoning is well distributed.
  3. Cook on low or high (4-6 hours): Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The soup is ready when the flavors have melded and the meat is cooked through. If using raw ground beef, ensure it reaches an internal temperature of 160°F.
  4. Taste and adjust (2 minutes): Before serving, give the soup a taste. Add salt, pepper, or more taco seasoning if needed. Add a squeeze of fresh lime juice to brighten it up. If the soup is too thick, add a splash of broth or water. If too thin, let it cook uncovered for another 15-20 minutes to reduce.
  5. Serve with toppings (5 minutes): Ladle the soup into bowls and let everyone customize their own with shredded cheese, sour cream, cilantro, avocado, and tortilla chips.

Notes

For best flavor, use fire-roasted tomatoes and a good-quality taco seasoning. The soup tastes even better the next day. For a vegetarian version, skip the meat and use two cans of beans plus vegetable broth. For a lower-sodium version, use no-salt-added beans, low-sodium broth, and reduced-sodium taco seasoning.
