A simple, no-cook charcuterie board designed for two people. It’s perfect for an intimate date night, featuring a balanced mix of cheeses, meats, and accompaniments that feels fancy but comes together in minutes.

Ingredients

Scale
  • 23 ounces soft cheese (e.g., Brie or Camembert)
  • 23 ounces firm cheese (e.g., aged Gouda or sharp Cheddar)
  • 12 ounces fun cheese (e.g., blue cheese like Gorgonzola or herbed goat cheese)
  • 34 ounces total mixed meats (e.g., Prosciutto and Genoa Salami)
  • 810 crisp crackers (e.g., water crackers or rosemary crackers)
  • A few slices of a good baguette, lightly toasted
  • 1 spoonful fig jam or honey
  • 1 handful cornichons (tiny pickles)
  • 1 handful olives (e.g., Castelvetrano)
  • 1 small handful red grapes (cut into small clusters) or slices of fresh fig or apple
  • 1 small handful roasted almonds or walnuts

Instructions

  1. Prep your ingredients: Take cheeses out of the fridge 15-20 minutes before starting. Slice baguette into thin rounds and toast lightly. Slice salami into thin rounds if not pre-sliced. Rinse grapes and pat dry.
  2. Place your bowls: Set small bowls or ramekins on the board first. Put jam in one bowl and olives in another.
  3. Add the cheeses: Place cheeses on the board, spaced out as anchor points. Put brie on one side, aged gouda on another, and blue cheese in a corner.
  4. Add the meats: Fold or drape prosciutto into loose ribbons near one cheese. Arrange salami slices in a small, overlapping pile.
  5. Fill the gaps: Place clusters of grapes in a few spots. Add toasted baguette slices and crackers in small stacks or fans. Scatter cornichons and almonds around the board, filling bare patches.
  6. Final touches: Step back and check balance. Add extra nuts or a sprig of fresh rosemary for color. Drizzle honey over brie or blue cheese for extra sweetness.

Notes

Let cheeses come to room temperature for best flavor. Don’t overcrowd the board; leave breathing room. Cut salami and baguette ahead for faster assembly. Serve with small plates for each person to keep the board neat. For a vegetarian version, skip meats and double up on cheese, adding marinated artichokes or hummus.
