Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (use gluten-free flour blend for GF option)
  • 3/4 cup unsweetened cocoa powder (preferably Dutch-processed)
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 8 oz cream cheese, softened (full-fat preferred)
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line with parchment paper.
  2. In a large bowl, whisk together melted butter and 2 cups sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition, then stir in 1 tsp vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Gradually fold dry ingredients into the wet mixture until just combined. Do not overmix.
  6. In a medium bowl, beat softened cream cheese with 1/2 cup sugar, egg yolk, and 1 tsp vanilla extract until smooth and creamy.
  7. Pour half of the brownie batter into the prepared pan and spread evenly.
  8. Dollop the cream cheese mixture in small circles over the batter.
  9. Spoon the remaining brownie batter over the cream cheese dollops, gently spreading to cover without mixing layers.
  10. Use a toothpick or skewer to drag lines from the center of the cream cheese circles outward and back inward, creating a spider web pattern.
  11. Bake for 30-35 minutes. Check at 30 minutes by inserting a toothpick into the brownie part; it should come out with a few moist crumbs but not wet batter.
  12. Let the brownies cool completely in the pan on a wire rack before slicing.

Notes

Use room temperature ingredients for best blending. Do not overmix the batter to keep brownies fudgy. If cream cheese mixture is too runny, chill for 10-15 minutes before swirling. Draw the spider web pattern immediately after assembling for easier shaping. Check doneness starting at 30 minutes to avoid overbaking. Variations include using gluten-free flour, dairy-free substitutes, adding espresso powder, or baking in cupcake tins with adjusted time.
