These crockpot mashed potatoes are creamy, buttery, and incredibly easy to make. Perfect for feeding a crowd, they stay warm for hours and taste like you spent all day on them.

Ingredients

Scale
  • 5 pounds russet potatoes, peeled and cut into 1-inch cubes
  • 4 cups low-sodium chicken broth
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, smashed
  • 1/2 cup unsalted butter, cut into pieces
  • 1 cup whole milk, warmed
  • 4 ounces cream cheese, softened and cut into cubes
  • Additional salt and pepper to taste
  • 2 tablespoons fresh chives, chopped (optional)
  • 1/2 cup sour cream (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Prep the potatoes. Peel all 5 pounds of potatoes and cut them into 1-inch cubes. Rinse the cubed potatoes in cold water to remove excess starch, then drain well.
  2. Layer everything in the crockpot. Place the cubed potatoes in your slow cooker. Add the smashed garlic cloves, salt, pepper, and pour in the 4 cups of chicken broth. Give everything a gentle stir.
  3. Cook on low for 6-7 hours or high for 3-4 hours. The potatoes are done when a fork slides into them with no resistance.
  4. Drain the excess liquid. Carefully pour off the remaining chicken broth from the crockpot, leaving about 1/4 cup.
  5. Add the butter and cream cheese. Drop the butter pieces and cream cheese cubes on top of the hot potatoes. Let them sit for about 2 minutes to start melting.
  6. Mash or beat the potatoes. For silky smooth potatoes, use a hand mixer on low speed for about 30 seconds. For chunkier potatoes, use a potato masher.
  7. Warm the milk and add it slowly. Heat the 1 cup of milk in a small saucepan over medium heat until warm. Gradually pour it into the potatoes while mixing on low speed. Start with half the milk and add more as needed.
  8. Taste and adjust seasonings. Add more salt and pepper to taste.
  9. Keep warm until serving. Switch the crockpot to the ‘warm’ setting. The potatoes will stay hot and creamy for up to 2 hours. If they start to look dry, stir in a splash of warm milk.

Notes

Don’t overmix the potatoes to avoid a gluey texture. The cream cheese is the secret to a velvety texture. For best results, warm the milk before adding. The potatoes can be kept warm in the crockpot for up to 2 hours.
