These crispy zucchini fritters feature a golden, crunchy crust and a tender interior, paired perfectly with a fresh, tangy feta dill yogurt dip. A quick and easy snack or appetizer that’s satisfying and flavorful.

  • 3 medium zucchinis, shredded and well-drained
  • 1 teaspoon salt (for drawing out moisture)
  • ½ cup (60g) all-purpose flour (can substitute almond flour for gluten-free)
  • 2 large eggs, room temperature
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill, finely chopped
  • ½ cup (75g) feta cheese, crumbled
  • ¾ cup (180g) plain Greek yogurt
  • 1 tablespoon freshly squeezed lemon juice
  • Black pepper, to taste
  • Additional salt, to taste
  • Olive oil, for frying

Instructions

  1. Shred the zucchinis using a box grater or food processor into a large bowl. Sprinkle with 1 teaspoon salt and toss well. Let sit for 10 minutes to draw out moisture.
  2. Transfer the shredded zucchini to a clean kitchen towel or cheesecloth and wring out firmly over the sink to remove as much water as possible.
  3. In a large bowl, combine the dried zucchini, ½ cup flour, 2 beaten eggs, minced garlic, and half of the chopped dill. Season with black pepper and additional salt if needed. Stir until just combined.
  4. Heat about 2 tablespoons of olive oil in a skillet over medium heat until shimmering but not smoking. Scoop ¼ cup portions of batter into the skillet, flattening slightly into 3-inch rounds. Do not overcrowd the pan; cook in batches if necessary.
  5. Fry each side for 3-4 minutes until golden brown and crispy. Flip gently with a spatula to avoid breaking. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  6. While frying, mix Greek yogurt, crumbled feta, remaining dill, and lemon juice in a small bowl. Season with salt and pepper to taste.
  7. Serve the warm fritters with a generous dollop of the tangy feta dill yogurt dip. Garnish with a sprig of dill if desired.

Notes

Squeezing out as much moisture as possible from the shredded zucchini is crucial for crispy fritters. Use a cast iron skillet for best crust. Flip fritters gently and only once. Keep cooked fritters warm in a 200°F oven if needed. For a dairy-free dip, substitute Greek yogurt with coconut yogurt and omit feta.
