  • Optional: 1 teaspoon honey or maple syrup, brushed on before roasting

Instructions

  1. Preheat oven to 425°F (220°C) and allow it to reach temperature for about 15 minutes.
  2. Pat chicken pieces dry thoroughly with paper towels to ensure crispy skin.
  3. In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme, lemon zest, and smoked paprika if using; stir well.
  4. Place chicken pieces in a roasting pan or oven-safe skillet.
  5. Drizzle the herb and oil mixture over the chicken and rub evenly over each piece.
  6. Season with freshly ground black pepper; avoid adding salt now as sea salt flakes will be added later.
  7. Arrange chicken skin-side up in a single layer, ensuring pieces are not crowded.
  8. Roast in the oven for 35 to 40 minutes, rotating pieces around the 20-minute mark if possible, until skin is golden and juices run clear.
  9. Optional: Brush honey or maple syrup on chicken during the last 5 minutes of roasting for a caramelized finish.
  10. Remove chicken from oven and immediately sprinkle sea salt flakes generously over the hot chicken.
  11. Let chicken rest for 5 minutes before serving to allow juices to redistribute.
