Instructions

  1. Preheat your waffle maker to medium-high heat for mini waffle makers or until hot for regular waffle irons (about 5 minutes).
  2. In a medium bowl, whisk together the flour, 2 tablespoons sugar, 1 teaspoon cinnamon, baking powder, and salt.
  3. In a separate bowl, beat the egg until frothy. Add milk, melted butter, and vanilla extract; whisk until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined; some lumps are okay.
  5. Lightly spray or brush the waffle maker with melted butter. Spoon about 2 tablespoons of batter per mini waffle cavity or spread thinly if using a regular iron.
  6. Close and cook for 3-4 minutes until golden brown and crispy.
  7. Remove warm waffle bites and toss immediately in a bowl with cinnamon sugar mixture (1/2 cup sugar + 1 tablespoon cinnamon) to coat.
  8. To make the dulce de leche drizzle, combine sweetened condensed milk and 1 tablespoon butter in a small saucepan over low heat. Stir constantly for 10-15 minutes until thickened and caramel-colored; do not boil.
  9. Remove from heat and stir in 1/2 teaspoon vanilla extract.
  10. Arrange coated waffle bites on a serving plate and drizzle with warm dulce de leche. Serve immediately for best texture.
