Transform your Thanksgiving leftovers into crispy, golden waffles with tender turkey and stuffing, served with warm gravy. This quick and easy recipe turns leftover ingredients into a delicious new meal in under 20 minutes.

Ingredients

Scale
  • 2 cups leftover stuffing (herb-seasoned preferred)
  • 1 ½ cups leftover turkey, shredded or chopped into small pieces
  • 2 large eggs, beaten
  • ¼ cup turkey gravy (plus more for serving)
  • ¼ cup all-purpose flour (or gluten-free blend)
  • ½ teaspoon black pepper, freshly ground
  • ¼ teaspoon salt
  • 2 tablespoons melted butter (for brushing waffle iron)
  • Warm turkey gravy for serving
  • Cranberry sauce (optional, for serving)
  • Fresh herbs like parsley or thyme for garnish (optional)

Instructions

  1. Preheat your waffle iron to medium-high heat. Brush the plates with melted butter.
  2. In a medium mixing bowl, combine the shredded turkey and leftover stuffing. Break up any large clumps.
  3. Add the beaten eggs, ¼ cup gravy, flour, salt, and pepper. Stir until well combined. The mixture should be moist but not soupy.
  4. Let the mixture rest for 2-3 minutes.
  5. Scoop about ½ cup of the mixture onto the center of the hot waffle iron. Spread slightly with the back of a spoon. Close the lid and cook for 4-5 minutes, or until golden brown and crispy.
  6. Carefully remove the waffle using a spatula. Place on a wire rack to keep crispy.
  7. Repeat with the remaining mixture, brushing the waffle iron with butter between each batch. Makes 4-5 waffles.
  8. While the waffles cook, warm the remaining gravy in a small saucepan over low heat.

Notes

Don’t skip the flour; it helps bind the waffles. If stuffing is wet, squeeze out excess moisture. Brush waffle iron with butter between batches for extra crispiness. Serve immediately for best texture. Leftover waffles can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in a toaster or oven to maintain crispiness.
