  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon chili flakes (optional)
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, thinly sliced

Instructions

  1. Cut the chicken into even, bite-sized chunks (about 1 to 1.5 inches). Pat dry with paper towels and set aside.
  2. In a medium bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. In another bowl, beat the eggs until smooth.
  3. Dip each piece of chicken first into the beaten eggs, allowing excess to drip off, then dredge in the dry flour mixture until fully coated. Set coated pieces on a plate.
  4. Pour about 1 inch of oil into a heavy-bottomed skillet or wok and heat over medium-high heat until it reaches around 350°F (175°C).
  5. Fry the chicken pieces in batches for 4-5 minutes each, turning occasionally, until golden brown and crispy. Remove and drain on paper towels or a cooling rack.
  6. While frying the last batch, combine honey, soy sauce, rice vinegar, garlic, ginger, sesame oil, and chili flakes in a small saucepan. Warm over medium heat, stirring frequently, until slightly thickened, about 3-4 minutes.
  7. Add all fried chicken to a large bowl, pour the warm honey sesame sauce over, and toss gently to coat evenly without breaking the crispy crust.
  8. Garnish with toasted sesame seeds and sliced green onions. Serve immediately with steamed rice or your favorite side.
