A quick and easy recipe featuring bone-in, skin-on chicken thighs pan-fried to crispy perfection and coated in a sticky, sweet, and savory honey garlic sesame glaze.

  • 4 bone-in, skin-on chicken thighs (about 2 pounds or 900 grams)
  • 3 tablespoons honey (raw honey preferred)
  • 1/4 cup soy sauce (60 ml, low-sodium recommended)
  • 4 cloves garlic, minced fresh
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1 tablespoon toasted sesame seeds
  • Thinly sliced green onions for garnish
  • Optional: red pepper flakes for heat

Instructions

  1. Pat the chicken thighs dry with paper towels to remove moisture. Season both sides lightly with salt and pepper. Let sit at room temperature for 10 minutes.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, sesame oil, and rice vinegar. Set aside. Mix cornstarch with water in a separate small cup until smooth to make slurry.
  3. Heat a large skillet over medium-high heat. Place chicken thighs skin-side down and cook undisturbed for 6-8 minutes until skin is golden and crispy. Flip and cook the other side for 5 minutes.
  4. Reduce heat to medium-low. Pour the honey garlic glaze over the chicken. Spoon sauce over the thighs and let simmer gently for 3 minutes.
  5. Stir the cornstarch slurry into the pan. Continue spooning glaze over chicken while it thickens, about 2-3 minutes, until sauce is sticky and coats the chicken.
  6. Remove from heat. Sprinkle toasted sesame seeds and chopped green onions on top. Add red pepper flakes if desired.
  7. Serve hot, ideally over steamed rice or noodles.

Notes

Pat chicken dry for crispy skin. Avoid overcrowding pan to prevent steaming. Use medium-low heat when simmering glaze to avoid burning honey. Add splash of water if glaze thickens too fast. Let chicken rest a few minutes after cooking for juicy results. Glaze can be prepared ahead and stored in fridge for up to 2 days (add cornstarch slurry fresh).
