  • Salt and freshly ground black pepper, to taste
  • 1/2 cup mayonnaise (or Greek yogurt for lighter option)
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 small garlic clove, minced
  • Salt and pepper to taste
  • 4 large flour tortillas or wraps (whole wheat or gluten-free options)
  • 2 cups romaine lettuce, chopped
  • 1/2 cup shaved Parmesan cheese
  • Optional: cherry tomatoes halved or thinly sliced avocado

Instructions

  1. Marinate the Chicken: In a medium bowl, combine olive oil, lemon juice and zest, minced garlic, oregano, salt, and pepper. Add chicken breasts and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  2. Prepare the Caesar Dressing: Whisk together mayonnaise, Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, and pepper in a small bowl. Refrigerate until ready to use.
  3. Grill the Chicken: Preheat grill or grill pan over medium-high heat. Lightly oil grates or pan. Remove chicken from marinade and grill for 5-6 minutes per side until internal temperature reaches 165°F (74°C).
  4. Rest and Slice: Let grilled chicken rest for 5 minutes, then slice into 1/2-inch thick strips.
  5. Assemble the Wraps: Lay tortillas flat. Spread a generous layer of Caesar dressing on each. Top with chopped romaine, sliced chicken, shaved Parmesan, and optional cherry tomatoes or avocado.
  6. Roll and Serve: Fold sides of tortilla toward center, then roll tightly from bottom up. Slice in half diagonally and serve immediately.

Notes

Pound chicken breasts to even thickness for uniform cooking. Rest chicken after grilling to keep it juicy. Spread dressing on tortilla to prevent sogginess. Use a meat thermometer to ensure chicken reaches 165°F (74°C). For dairy-free, substitute Parmesan with nutritional yeast and use dairy-free mayo.
