A quick and easy gourmet recipe featuring a crispy skin salmon fillet pan-seared with garlic butter and herbs, perfect for solo dinners.

  • 6 oz (170 g) salmon fillet, skin-on
  • 2 tbsp (28 g) unsalted butter
  • 2 garlic cloves, minced
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp fresh parsley, chopped
  • 1 lemon wedge
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Pat the salmon fillet dry with paper towels to remove excess moisture. Season both sides generously with salt and freshly ground black pepper. Let it sit at room temperature for 5 minutes.
  2. Place your skillet over medium heat and add the olive oil. Let it warm until shimmering but not smoking, about 1-2 minutes.
  3. Place the salmon skin-side down into the hot pan gently. Press down lightly with a spatula to ensure even contact. Cook without moving for about 4-5 minutes, until the skin is golden and crisp.
  4. Carefully turn the fillet over and cook on the flesh side for 2-3 minutes, depending on thickness, until just cooked through but still moist inside.
  5. Reduce heat to low. Add the butter and minced garlic to the pan around the salmon. Let the butter melt and garlic soften without burning, about 1-2 minutes. Swirl the pan gently to combine the flavors.
  6. Use a spoon to continuously scoop the garlic butter over the salmon fillet for 1-2 minutes to keep the fish moist and infuse it with rich garlicky flavor.
  7. Remove the salmon from the pan and transfer to a plate. Spoon any remaining garlic butter over the top. Sprinkle with fresh parsley and squeeze a lemon wedge over the fillet to brighten the flavors.

Notes

Pat salmon dry to ensure crispy skin. Use moderate heat to avoid burning garlic butter. Press salmon gently when placing skin-side down. If salmon is thicker than 1 inch, add an extra minute cooking on flesh side. Avoid moving salmon while searing for best crispiness. For dairy-free, substitute butter with vegan butter or olive oil but flavor will differ.
