  • 8 oz (225 g) softened cream cheese
  • 1 cup (115 g) shredded sharp cheddar cheese
  • 12 slices thick-cut bacon (nitrate-free recommended)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Optional: dash of hot sauce mixed into the cream cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with foil. If using, place a wire rack on top to help the bacon crisp from all sides. This takes about 10 minutes.
  2. Wearing gloves, slice each jalapeño in half lengthwise and scoop out seeds and membranes. Rinse and pat dry.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until smooth and evenly blended. Add hot sauce if desired.
  4. Use a small spoon or scoop to fill each jalapeño half generously with the cheese mixture, pressing slightly to pack it in.
  5. Take a slice of thick-cut bacon, cut in half if needed, and wrap one piece around each stuffed jalapeño. Secure with a toothpick if necessary.
  6. Place poppers seam side down on the wire rack or foil-lined baking sheet, spacing them evenly.
  7. Bake for 20-25 minutes, monitoring closely after 15 minutes. Bacon should be crisp and cheese bubbly. Tent with foil if bacon crisps too fast.
  8. Let poppers rest for 5 minutes before serving to allow filling to set.

Notes

Use thick-cut bacon for better crisping and texture. Wearing gloves when handling jalapeños prevents irritation. If you want extra crispy bacon, broil for 1-2 minutes at the end but watch carefully to avoid burning.
